Our First Spaghetti Squash

About a week ago, James and I started working out together to Shaun T’s Rockin’ Body. It’s really intense and definitely takes a lot of effort, so I’ve been trying to cook a little healthier so we don’t sabotage our exercise. We don’t have a particular diet, really. Just trying to go whole grain with lots of veggies.

Saturday Morning, I sautéed some peppers, red onion, and thyme from my herb garden, sliced up a little sausage, then mixed in an egg and added a little cheese on top. It was really good!

After breakfast, I went to the grocery store and bought a bunch of fruits, veggies, quinoa, Ezekiel Bread, and chicken. It’s hard to eat poorly when your house is full of healthy stuff, right?

The rest of the weekend was nice. Sunday after church we took a walk to the library. I picked up a few random history things- one about medieval female rulers of England and one about little known snippets in American history. Then we went to our local farmers market and bought crab dip mix, a soy candle, pizza for lunch, and wine for dinner.

Sunday afternoon I cooked my first spaghetti squash. It was really good! We both enjoyed it. All you do it cut it in half, scoop out the seeds, brush with olive oil, and roast face-down in a 450°F oven for 30 minutes. Let it cool, then scoop out the flesh with a fork. So easy! We ate ours with sausage and peppers.

We got so much done this weekend, but still had time to eat healthy, take walks, read books, go to Mass, and visit family. I love our beautiful life.

Holiday Pizza Party!!

Our party was a huge success!! Chili and Pizza are now acceptable holiday dishes. We had about 20 people, all of which seemed to be enjoying themselves immensely. Here was the menu:

Appetizers:

Artichoke and Crab dip w/ pita, salsa w/ chips, Manchego cheese straws, veggies, cheese plate w/ feta, pepperjack and a soft spreadable garlic cheese

Dinner:

Chili with toppings (meatless for our vegetarian friends), 5 pizzas (2 plain, 1 pepperoni, 1 CA’s veggie supreme, 1 half veggie half plain), Salad with Pinot Grigio vinaigrette made by my fabulous Aunt Diane.

Dessert:

Oreo pie, Cynthia’s famous brownies (AMAZING!!), Christmas cookies (made by myself and James) and a DARLING Christmas Cake made by Genna and my mom (decked out with Christmas cookies, Hershey kisses, and m&m’s)

Drinks:

Soda, lemonade, wines, egg nog

 

It was great! Sadly I burned my finger on a 425F oven rack taking a pizza out of the oven, but luckily my cousins took over the job of cooking pizzas after that. It was so much fun seeing family, and everyone’s fiancés and boyfriends added a lot to the party. The  party actually gave me a chance to see how my family has grown, and how all the new people really add a lot to the fun!

Easy and Awesome Salmon Dinner

Last night I was in a real hurry to make dinner, so I picked up a slab of salmon and some baby bella (cremini) mushrooms. It was DELICIOUS and so easy. Here’s what I did:

Salmon

Drizzled it with olive oil, sprinkled salt, fresh pepper, garlic powder and dill. Pop in in the oven on 350F for 20-30 minutes. Done.

Mushrooms with White Wine

In a frying pan on medium-medium high heat, drizzle olive oil. Take one clove of garlic, peel, slice in half and remove green stem. Put in pan. Add sliced cremini mushrooms, with generous amount of fresh pepper and some salt. Sauté until tender. Once they mushrooms start to reach the tender stage, add a generous splash of white wine or about 1/4 to 1/2 cup. Let the wine cook down. DONE.

Dinner’s ready!
